1/4" galvanized cable resists rust.
 
Typical sizes are 40ft of cable for each side on a belly dump or bobtail. 80ft per side will work for most end dump applications up to 37ft. This will give you a few extra feet to pull the cables tight for ease of installation with no additional tools.
